Prepare ingredients.
Put dried chili peppers (at will) into a small bowl.
Add 200-250 milliliters of hot water.
Soak for 15 minutes.
Drain the chili peppers.
... and transfer to a mortar.
Add 3-4 garlic cloves.
Add 1/2-1 tablespoon of salt.
Add 1 tablespoon of coriander powder.
Add 1/2 tablespoon of cumin seed powder.
Grind the spice mix finely.
Add 2-3 tablespoons of olive oil.
Mix in gently and ready to use for other recipes.


Harissa is a Tunisian hot chili sauce whose main ingredients are piri piri (type of chili pepper) and spices and herbs such as garlic paste, coriander seed, red chili powder, caraway (cumin seed) as well as some vegetable or olive oil. It is most closely associated with Tunisia, Libya and Algeria but recently also making inroads into Morocco according to Moroccan food.
