Hakau Udang
Prepare ingredients.
Heat 1-1,5 liter water.
Put 200-250 grams of Haa Kaauw flour into a bowl.
Gradually pour hot water over the flour.

Prepare a dough hook.
Knead for a few minutes.
Add hot water if necessary.
Kneading for 5-8 minutes ...

Set aside.
Cut 250-300 grams prawn into small pieces.
Add 2 tablespoons of soy sauce.
Add 1/2 teaspoon of salt.
Add 1 teaspoon of sugar.
Add 1/3-1/2 teaspoon of pepper powder.
Add 1-2 teaspoons of sesame oil.
Mix in gently.
Add 1 tablespoon of tapioca flour.
Mix in gently.
Put aside.
Heat 1 liter of water.
Put large red chili peppers (at will) into boiling water.
Also some small red chili peppers. Cook for 2 minutes.
Chop cooked large chili peppers into chunks.
Transfer to a mortar.
Also cooked small red chili peppers.
Chop 3-4 cloves of garlic finely.
Heat 2-3 tablespoons cooking oil.
Put chopped garlic into hot oil.
Fry until fragrant.
Add fried garlic to chili peppers.
Mash coarsely.
Transfer to a small bowl.
Pour the rest of hot oil to the chilis.
Add a pinch of salt.
Mix in.
Heat enough water in a steamer.
Divide the dough into pieces ...
... and roll each into a small ball.
Make it flat.
Roll out the dough on a work surface until it becomes a relatively thin sheet.
Pile 1-2 teaspoon of stuffing into the middle on the sheet.
Fold the sheet in semicircle.
Use fingertips to press edges together.
Shape in waves.
Repeat the steps with remaining dough.
Fill the bamboo steamer baskets with dumplings.
Make sure the top layer is covered with a lid.
Settle the steamer basket over the pot.
Keep an eye on the water level and add more if the pot starts to go dry. Check dumplings periodically until it is done.


Hakau Udang is a shrimp-stuffed dumpling; like dimsum but has a transparent skin.
