Prepare ingredients.
Cook 1,5-2 kilograms of potato in gently boiling water until tender, about 15-20 minutes.
Heat 3-4 liters of cold water in a cooking pot.
Add 400-500 grams of beef bone.
Bring to a boil.
Skim off the foam that rises to the top.
Turn heat to medium.
Add 1-1,5 tablespoon of salt.
Add 800-1000 grams of quality  boiling beef.
Quarter 1 onion (with its skins as shown in the picture).
Add the onion chunks to the cooking pot.
Peel 2-3 carrots.
Peel 1-2 yellow carrots.
Peel 1-2 parsley roots.
Peel 50 grams of celery root.
Add the whole carrot, yellow carrot, parsley root and celery root to the cooking pot.
Add 1/2 stalk of leek and 1-2 sprigs of parsley.
Add 3 bay leaves.
Add 1/2 teaspoon of juniper berry.
Add 1/2-1 teaspoon of peppercorn.
Simmer for 2-2,5 hours.
Peel the boiled potatoes ...
... and cut them into thin slices.
Chop 1 onion finely.
Heat 2-3 tablespoons of cooking oil in a wok.
Put the chopped onion into the hot oil.
Fry onion until it is soft and starting to brown.
Add potato slices.
Sprinkle with 1-1,5 teaspoon of salt.
Sauté for 15-20 minutes.
Remove from the heat and then put aside.
Peel 3-4 apples.
Cut the apple in half and remove seeds from the apple.
Grate the apple and put the grated apple to a small bowl.
Grate 2-3 tablespoons of horseradish and add the horseradish to the same bowl.
Add 1/3-1/2 teaspoon of salt.
Mix the ingredients.
Remove the meat from the broth.
Cut the beef into 1/2-1 centimeter thick slices (as shown in the picture).
Serve with roasted slices of potato, a mix of minced apples and horseradish.

Description

Tafelspitz is boiled veal in broth, usually served with simple grated horseradish and roasted slices of potato rosti. It is considered to be the national dish of Austria. Tafelspitz is simmered along with root vegetables and spices in the broth.
