Soto Ayam

Prepare the ingredients.
Rinse 1 whole chicken under cold running water.
Prepare 2-3 liters of water in a cooking pot.
Add the whole chicken.
Bring to a boil.
Skim off the foam that rises to the top.
Continue cooking.
Add pieces of 1 red onion to a food processor.
Add 3 garlic cloves.
Add pieces of 2 centimeters of ginger.
Add 5 candlenuts.
Add 3-4 teaspoons of salt.
Add 1/2-1 teaspoon of pepper powder.
Add 1-2 teaspoons of turmeric powder.
Add 1 tablespoon of coriander seed powder.
Grind the spice mix finely.
Heat 2-3 tablespoons of cooking oil in a pan.
Put the spice mixture into the hot oil.
Fry the spices until they start to get fragrant.
Add the spice mix to the cooking pot.
Stir briefly.
Add pieces of 2 centimeters of galangal.
Add pieces of 2 stalks of lemon grass.
Cut 1 celery stalk into pieces (as shown in the picture).
Add the celery to the cooking pot.
Add 2-3 bay leaves.
Add 3-5 kaffir lime leaves.
Turn heat to medium. Simmer for 30 minutes.
Heat 1-1,5 liter of water in a cooking pot.
Add 250-300 grams of rice noodles to boiling water.
Cook for 2-3 minutes or until al dente.
Remove it from heat and submerge in a bowl of cold water.
Remove the meat from the broth.
Remove skin from the chicken.
Remove the bones from the chicken meat.
Shred chicken breast with the fingers along the grain into long strips.
Cut 1 lime into wedges.
Add 1-2 teaspoons of salt to the chicken broth.
Bring to a boil.
Prepare servings.
Add the soybean sprouts (at will).
Add the chicken meat (at will).
Add the chicken broth.
Add 1 tablespoon of fried onion.
Serve with the sweet soy sauce , the chili sauce and the lime.


Soto ayam is a yellow spicy chicken soup with rice and/or vermicelli or noodles, commonly found in Indonesia. Turmeric is added as one of its ingredients to get yellow chicken broth. Besides chicken and vermicelli, it is also served with hard-boiled eggs, sate kerang, perkedel kentang and fried shallots. Krupuk are a very common topping.

250 grams rice noodles (or glass noodles)
100 grams soybean sprouts

  chili sauce (or pepper saouce)
  sweet soy sauce
  fried onion (or fried shallot)
