Shrimp croquettes
Prepare ingredients.
Melt 250 grams of butter.
Add 300 grams of flour to the melted butter.
Mix in gently. Stir constantly until the dough starts to clump together.
Add 300 milliliters of fish stock and stir briefly.
Add 150 milliliters of whipped cream and stir briefly. Turn off the heat.
Add juice of 1 lemon.
Add 1 teaspoon of salt.
Add 1 teaspoon of pepper powder.
Add 1/4-1/2 teaspoon of nutmeg powder. Stir until everything is mixed well.
Add 2 eggs.
Mix in gently.
Transfer to a bowl.
Cut 700 grams of prawn into small pieces.
Add them to the dough.
Mix in gently.
Chop 1 bunch of parsley finely.
Add the chopped parsley to the dough.
Mix in gently.
Cover the bowl well. Let it rest overnight in the refrigerator.
Flour the work surface.
Take 1-2 tablespoons of dough into the palm of your hand.
Form the dough into a long cylinder.
Repeat step 22-23 with the remaining dough.
Prepare 2 egg white in a plate.
Prepare also 70-100 grams of breadcrumbs.
Dip the crouquette into the egg white.
Turn it in the breadcrumbs to coat all sides.
Repeat step 27-28 with the remaining croquettes.
Heat the cooking oil in a wok (for deep-frying).
Put the croquettes into the hot oil.
Fry until golden brown.

A croquette is a small breadcrumbed fried food roll containing, usually as main ingredients, mashed potatoes and/or ground meat, fish or seafood, cheese, vegetables and mixed with béchamel, and soaked white bread, egg, or any of the combination thereof. The croquette is usually shaped into a cylinder, disk or oval shape and then deep-fried.
