Nasi liwet
Prepare ingredients.
Hard boil 3 eggs.
Put 1/2-3/4 liter coconut milk into a pot.
Add pieces of 2 stalks of lemon grass.
Add pieces of 2 centimeters of galangal.
Add 2 bay leaves.
Add 1-2 teaspoons of salt.
Submerge 300 grams fragrant rice in water and wash it.
Pour out the starchy water and transfer the wet rice to coconut milk.
Heat the pot.
Bring to boil.
Turn heat to a lowest level.
Cover the pot and simmer rice for 15-20 minutes.
Remove from the heat and transfer to a plate/bowl.
Put chunks of 1 red onion to a pan.
Add 3-4 garlic cloves.
Add red chili peppers (at will).
Add 5-7 candlenuts.
Add chunks of 2 centimeters of ginger.
Add 5-8 grams of shrimp paste.
Stir-fry without oil until they start to get fragrant.
Transfer to a food processor.
Add 1 tablespoon of coriander seed powder.
Add 1 teaspoon of turmeric powder.
Add 1/2-1 tablespoon salt.
Add 1 teaspoon of pepper powder.
Add 1 teaspoon of cumin seed powder.
Grind the spice mix finely.
Heat 2-3 tablespoons of cooking oil in a pot.
Put the spice mixture into the hot oil.
Fry the spices until they start to get fragrant.
Add chunks of 1/2-1 whole chicken.
Add 2 bay leaves.
Add 2-3 kaffir lime leaves.
Add pieces of 1 stalk of lemon grass.
Add pieces of 1-2 centimeters of galangal.
Stir-fry briefly.
Add 250 milliliters of coconut milk.
Add 250 milliliters of water.
Add 1 teaspoon sugar.
Add boiled eggs.
Continue cooking until the meat is done.
Peel 1-2 chayotes.
Cut chayotes in half.
Cut chayotes into strips.
Cut red chilli peppers diagonaly (at will).
Heat 2 tablespoons of cooking oil in a wok.
Put chopped chilli peppers into the hot oil.
Stir-fry briefly.
Add chayote strips.
Stir-fry briefly.
Take 2-3 ladles of coconut milk sauce.
Add to the vegetables.
Add red chilli peppers (at will).
Cook until the vegetables are cooked.
Take the meat from the coconut milk sauce.
Let cool briefly.
Shred meat with the fingers along the grain into long strips.
Prepare serving.
Put rice, shredded meat, egg and vegetables portion on banana leaf. Add fried onion.


Nasi liwet is a kind of food from Solo, Central Java. Rice is usually cooked in water, but nasi liwet is rice cooked in coconut milk and chicken broth, thus give the rice rich and succulent taste.

1 teaspoon turmeric powder
1 tablespoon salt (1-2 tablespoons)
1 teaspoon pepper powder
1 teaspoon cumin seed powder
1 teaspoon sugar
4 Indonesian bay leaves (substitute: bay leaves)
2 kaffir lime leaves (2-3)
3 galangal (3-4)
4 tablespoons cooking oil
  fried onion
  banana leaves (optional)
