Blini
Prepare ingredients.
Melt 25 grams of butter.
Prepare 500 milliliters of milk in a cooking pot.

Add 1 teaspoon of salt.
Beat until the mixture is really light and creamy.
Add the egg yolk-sugar-mixture to the flour-milk-mixture.

Beat the egg white until stiff.
Add the beaten egg whites to the beaten whipped cream.
Mix in gently.
Add the egg white-whipped cream-mixture to the flour-milk-mixture.
Stir until everything is mixed well.
Cover the bowl with a clean cloth and leave to rest for at least 30 minutes.
Heat a pancake pan.
Turn heat to a low level.
Grease pancake pan with butter or cooking oil.
Pour a ladle full of batter into the heated pan.
Tilt the pan around so the batter covers all the surface of the pan.
Cook until lightly golden on one side.
Flip the pancake over.
Cook until lightly golden on the other side.
Repeat step 31-36 with the remaining batter.
Keep warm.
Chop 1 onion finely.
Heat 2-3 tablespoons of cooking oil in a wok.
Put chopped onion into the hot oil.
Fry until onion starts to get fragrant.
Add 500 grams of minced beef.
Fry until the meat changes color.
Add 1-1,5 teaspoon of salt.
Add 1/2-1 teaspoon of pepper powder.
Cook until the liquid has evaporated.
Take a blini.
Spread 1-1,5 tablespoon of ragout in the center of the blini.
Fold three times to make a triangle shape.
Or fold up all 4 sides, like a small burrito.
Repeat step 48-51 with remaining pancakes and ragout.
For the sweet stuffing: put 250 grams of quark to a bowl.
Add 1-2 tablespoons of sugar.
Mix in gently.
Add 2 tablespoons of sour cream.
Grate 1 lemon peel and add the lemon peel to the bowl immediatelly.
Add 1-2 tablespoons of raisin.
Mix in gently.
Take a blini.
Spread 1-1,5 tablespoon of sweet stuffing in the center of the blini.
Fold three times to make a triangle shape.
Or fold up all 4 sides.
Ready to serve.
Serve.

Description

Blini is a type of thin pancake, were symbolically considered by early Slavic peoples in pre-Christian times as a symbol of the sun, due to their round form. Traditional Russian blini are made with yeasted batter.

In Russia, Blini are often stuffed or folded and dipped in sour cream. For the filling can be something spicy or something sweet. If you want to do without the sweet stuffing, you will eliminate the last 5 ingredients here.
